Copper cookware is lined due to the acidic reaction with certain foods such as tomatoes. The lining used in copper is very important. Some linings are better heat conductors than others. Tin is often used in the lining of copper. This is due to tin being a great heat conductor. This lining may become scratched. If this happens the copper products would need to have replacement tin added to the product. Toxic substances can be released if the scratched linings aren't replaced.

Avoiding acid foods and metal utensils that may damage the lining . If you avoid these products , your tin lined copper cookware should last for generations.

Stainless steel is becoming very popular when it come to lining copper. Stainless steel linings don't melt nor scratch. The stainless steel does cut down on the heat conduction. Take your time when buying cooper cookware .Weight out your options. You will be glad you did.
